- 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp rice vinegar
- 1 tbsp cornstarch
- 1 clove garlic, minced
- 1/4 cup chopped green onions, for garnish
- 1 tbsp oil (vegetable or canola)
Instructions
- In a medium bowl, combine soy sauce, brown sugar, rice vinegar, and minced garlic. Stir until sugar dissolves to create the marinade.
- Add the chicken cubes to the marinade, ensuring each piece is well-coated. Let it marinate for at least 15 minutes.
- Heat oil in a large skillet or wok over medium-high heat.
- Remove chicken from the marinade (reserve the marinade) and cook in the skillet until browned and cooked through, about 5-7 minutes.
- Add pineapple chunks to the skillet and cook for an additional 2-3 minutes.
- In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry.
- Pour the reserved marinade into the skillet with the chicken and pineapple. Bring to a simmer.
- Slowly stir in the cornstarch slurry, cooking until the sauce thickens, about 1-2 minutes.
- Garnish with chopped green onions before serving.
Notes
For a spicier kick, add a pinch of red pepper flakes to the marinade. Serve over steamed rice or alongside stir-fried vegetables for a complete meal.
