Description

A rich and moist chocolate cake that’s perfect for any occasion.


Ingredients

  • 1 and 3/4 cups (220g) all-purpose flour
  • 3/4 cup (65g) unsweetened cocoa powder
  • 2 cups (400g) granulated sugar
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • 1/2 cup (120ml) vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup (240ml) boiling water

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until smooth.
  4. Carefully stir in the boiling water. The batter will be thin, but this ensures a moist cake.
  5. Pour the batter evenly into the prepared pans.
  6. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and allow the cakes to cool in the pans for about 10 minutes. Then, remove from pans and cool completely on a wire rack before frosting.

Notes

For an extra layer of flavor, add a teaspoon of instant espresso powder to the dry ingredients. This enhances the chocolate flavor without adding a coffee taste.
