Description
A classic Thai dessert featuring sweet glutinous rice soaked in rich coconut milk, paired with ripe, juicy mango slices, and drizzled with a sweet-salty coconut sauce.
Ingredients
Scale
- 1 cup glutinous (sweet) rice
- 1½ cups water
- 1½ cups coconut milk, divided
- ½ cup sugar, divided
- ¼ teaspoon salt, divided
- 1 tablespoon cornstarch
- 2 ripe mangoes, peeled and sliced
- Sesame seeds, for garnish (optional)
Instructions
- Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 1 hour, or overnight for best results.
- Drain the soaked rice and place it in a steamer lined with cheesecloth or a clean kitchen towel. Steam over medium heat for 20-25 minutes, or until the rice is tender.
- While the rice is steaming, prepare the coconut sauce by combining 1 cup of coconut milk, ¼ cup of sugar, and ⅛ teaspoon of salt in a saucepan. Cook over medium heat, stirring until the sugar dissolves. Do not let it boil. Remove from heat and set aside.
- Once the rice is cooked, transfer it to a bowl and immediately pour the warm coconut sauce over it. Stir to combine, cover, and let it sit for 20-30 minutes to allow the rice to absorb the sauce.
- For the topping sauce, mix the remaining ½ cup of coconut milk with ¼ cup of sugar, ⅛ teaspoon of salt, and 1 tablespoon of cornstarch in a saucepan. Cook over medium heat, stirring constantly until it thickens. Remove from heat and let it cool.
- To serve, place a portion of the coconut-infused sticky rice on a plate, arrange mango slices on the side, and drizzle with the topping sauce. Sprinkle with sesame seeds if desired.
Notes
For an authentic experience, use Thai glutinous rice and fresh coconut milk. Ensure the mangoes are ripe and sweet for the best flavor combination.
